Pastor Marinade

 

 

Ingredients

  • 25 guajillo chilis 
  • 3 ancho chilis 
  • ½ white onion
  • 4 garlic cloves
  • 6 twigs of fresh oregano
  • ¾ tsp of ground cumin
  • ½ tsp ground clove
  • 6 bay leaves
  • 6 tbsp apple cider vinegar 
  • 3 tsp salt
  • 1 tsp pepper

Method

  • Soak the ancho, guajillo chilis, garlic and onion in hot water for about 1 hour or once soft.
  • Blended with oregano vinegar cumin clove bay leaves salt and pepper.
  • Let it cool down and then use it to marinate shrimp, pork, portobello, mushrooms, chickpeas.
